The Story

Bamboo noodles get their name from the traditional method of making them: a large bamboo pole is used as a giant rolling pin, with the noodle maker sitting on one end and bouncing on the dough to knead it. This labor-intensive technique — which can take over an hour of pole-bouncing — produces noodles with an extraordinary springiness that machine-made noodles cannot replicate. The method dates back generations in Guangdong province, and while it is increasingly rare, a handful of dedicated noodle shops in the region still practice it.

The key ingredient is duck egg (no water is added to the dough), which gives the noodles their distinctive golden color and rich, bouncy texture.
