The Story
The name “dàn dàn” refers to the carrying pole (扁担) that street vendors used to carry their noodle supplies through the streets of Chengdu — a pot of noodles on one end, sauce and toppings on the other. This was the original street food, sold by walking vendors who would set up anywhere customers gathered.
What to Expect
A small bowl (Chengdu portions are traditionally small — this is a snack, not a main meal) of thin noodles sitting in a dark, fragrant sauce at the bottom. You mix everything together before eating. The sauce is intensely flavored — sesame, chili, and preserved vegetables create a flavor bomb in a small package.
