The story
Named after a pockmarked (麻) woman (婆) who ran a small Chengdu restaurant in the Qing Dynasty. Her tofu became famous enough that people named it after her. The “má” does double duty: it means both “pockmarked” (her face) and “numbing” (the peppercorn sensation).
What to expect
A hot plate arrives with cubes of silken tofu sitting in red sauce. Chili hits first, then the peppercorn: a tingling numbness that spreads across your lips and tongue. This is málà (麻辣), the flavor Sichuan is known for. You will either chase it or avoid it.
Tips
Eat it with plain white rice. Scoop the tofu and sauce over the bowl. On its own it is too rich and salty.
